What’s In the Bag – Updates

While we were away, my friend Michele took our CSA bags for us, and her enthusiasm for the veggies and trying new things was inspiring. After hearing about her roasted red pepper pizzas and bok choy stir fries, I resolved to get back in gear and make the most of my CSA bags and goods from my garden.

It wasn’t that I’d been wasteful, it was more of an attitude shift. What had started to wear on me – dealing with the constant barrage of veggies – was now exciting again.  So I’ve been going for the gusto, freezing food for winter, and getting the most out of this years harvest.

The picture above is from two weeks ago. The brownish looking tomato in front is an heirloom Japanese Black Trifele tomato, and was hands down the best tomato I’ve ever tasted. Not too sweet, meaty, and not at all acidic, it was the perfect compliment to a sandwich, although, I have to admit that I ate half of one while I was cutting it. I couldn’t stop myself.

I won’t bore you with catch up pictures of every bag since our trip (Michele was awesome and took pictures for me – one of her bags was 18lbs!), but I will tell you what I’ve been cooking since we got back.

The yield from my cherry tomato plants has been ridiculous. It’s like a never ending sea of tomatoes, and while I know they aren’t idea for sauce, I decided to make some anyway. I obviously didn’t bother seeding or peeling them, but since the seeds and peels on cherry tomatoes are more delicate anyway, it didn’t matter. The sauce turned out great. I made two huge batches in two weeks and used it for pizza, and for lasagna and eggplant parm that’s in the freezer ready for a quick meal later in the year. The occasional microwave meal can be expensive, but there are some nights where cooking just doesn’t seem like an option, so I’m hoping this will help us keep our grocery bills lower this winter. I do have to say that at the moment, I’m completely sick of Italian food though. I’ve had way too much lasagna in the past two weeks.

Following Michele’s lead, I roasted peppers on the grill until the skins bubbled. I had tons of peppers both from the CSA, and from my garden. After I roasted them, I put them in a covered bowl to sweat so the skins would come off easily. I peeled them, cut them in strips, and put them in a jar with some oil, vinegar, fresh oregano and basil and garlic. I stored the jar in the fridge overnight. The next day I drained the oil (and saved it to marinate chicken later in the week), and froze the peppers in a large container, and also in an ice cube tray. One cube is about enough peppers to add to a sandwich, and it makes it super convenient to defrost just a little at a time.

I roasted beets, turnips, onions, from the CSA bag with some carrots and herbs from my garden, and we had a side of veggies every night for a week.

I made four batches of gluten-free zucchini muffins this past weekend. After eating WAY too many of them yesterday, I froze the rest and will have them for breakfast for months to come. I was going to make some carrot fig muffins too, but I kept snacking on the carrots I pulled.

Tip of the Day

If It Doesn’t Smell, Don’t Wash It

According to Real Simple, if every American made an effort to launder less — cutting out just one load of laundry a week per household — we’d save enough water to fill seven million swimming pools each year.

So if it looks clean, and it smells clean, call it clean and wear it again. Consider hanging worn clothes out on your clothesline to freshen them up between wearings.
