Meat-Free Mondays – Quinoa, Mango & Black Bean Salad

I love summer salads.  They’re light and quick.  You can make them ahead of time and keep your kitchen cool.

RealAge.com has a great recipe for Quinoa, Mango & Black Bean Salad.  Three of my favorite foods all in one!

At 422 calories and 15 grams of protein per serving, you can easily make this salad a meal.

  6. Hey – I tried this for dinner last night and it’s so yummy! I didn’t have a mango so I used a couple of apricots instead and I think it worked well. I’m always so happy when I can find another veggie thing that my meat eating husband will eat. Thanks for passing this along!

    I keep a recipe binder too! It’s awesome! I make notes on all the stuff I’ve tried and have a section for those things I don’t want to make again.
