I love summer salads. They’re light and quick. You can make them ahead of time and keep your kitchen cool.

Hey – I tried this for dinner last night and it’s so yummy! I didn’t have a mango so I used a couple of apricots instead and I think it worked well. I’m always so happy when I can find another veggie thing that my meat eating husband will eat. Thanks for passing this along!
