Meat-Free Mondays – Pizza Night!

Sure, you can load a pizza up with meat, but you don’t have to and it’s still good. Pizza is a great option for your weekly meat-free meal. Here are some recipes and ideas to make your pizza night eco-friendly.
Homemade pizza crust is super easy and so good.
Since I can’t eat wheat, I use Gluten-Free Pantry’s French Bread and Pizza Mix to make the crust. It’s so good that my brother-in-law didn’t even know he was eating gluten-free pizza when my mother-in-law made it over the holidays.
But before wheat and I had our falling out, my husband and I made whole wheat crust from scratch using this recipe.

If you can’t give up the cheese, try going a little lighter with it, and pile up your pizza with organic veggies. And if you really miss the meat, try a meat substitute, like soy pepperoni or “soyrizo” sausage.














Ooo, I love making my veggie pizza with caramelized onions, roasted red peppers and sliced plum tomatoes. Now I’m hungry!
You can also put shredded tofu on top of pizza for a good cheese substitute. There’s a place in Colorado that makes vegan pizza with a crust that’s so good, you dip it in honey and eat it like dessert.
