Meat-Free Mondays – Egyptian Stew

This is the first RealAge recipe I haven’t loved, but there were elements to it that were fabulous.  Here’s what it is, and here’s what I will change the next time I make it.

The recipe is for Egyptian Edamame Stew.  I love Edamame, but I feel like it was the wrong choice bean for this recipe.  Edamame doesn’t have the rich, hearty feel that other beans have.  We joked while we were eating this that it was “just a big bowl of healthy.”  I love eating healthy food, but I don’t like feeling like I’m eating it just because it’s healthy, if that makes any sense.  Next time around, I’ll use black beans, or a mix of black beans and navy beans, and possible add some Soyrizo.

The tomato sauce was too thin.  This could be easily fixed by adding a dollop of tomato paste.

I used mint, and liked the flavor, but my husband didn’t.  Next time, I’ll go the cilantro route, and I plan to double the spices, and add a pinch of sea salt.

With the changes, this should be a great recipe, and an excellent way to use all the CSA zucchini we’re expecting.

For a lot of kids, going back to school means riding the bus. In some neighborhoods, the school bus stops at every single child’s house, where it idles and waits for the child to collect her things, say goodbye to mom, pet the dog, smell some flowers, and skip (at a leisurely pace) over to get on the bus. Not only is the bus idling the entire time, but so is every car behind the bus.

If this happens in your neighborhood, talk to the bus company and to other parents in the neighborhood. Set up a common school bus pick up spot at the end of your street or someone’s driveway. A little conversation can make a big difference.
