Meat-Free Mondays – Dianne’s Wild Rice Squash Bake

We are rapidly approaching that time of summer where we will be drowning in zucchini and yellow squash.  Dianne has a great way to turn summer squash into a hearty meat-free meal.Check out her recipe for Wild Rice Squash Bake.  I’m going to have to do a little brainstorming so I can make a gluten free version of this.  It looks SO good!

  3. I think Ian’s makes a gf breadcrumb mix. I haven’t tried it, but they use it on a lot of their gf frozen products. It should work fine to help make the dish gf!
