Meat-Free Mondays – Black Beans and Millet

Mrs. Twink over at My So-Called Wedded Life totally cracks me up.  Seriously, she’s like a breath of (really funny) fresh air, and you should totally read her blog.

She’s also been testing out some really cool vegan recipes lately.

Check out this week’s recipe for Black Beans in Chipotle Adobo Sauce with Mexican Millet Brown Rice.

And if you are wondering what millet is, you can pretty much find out everything you ever wanted to know about millet but were afraid to ask here.  But I think brown rice sounds like a great subsitute.

  1. I had a friend from the bookstore who would eat millet straight out a mason jar, and it kind of disgusted me. So yeah, any time brown rice can be substituted, that’s what I’m talking about…
