Meat Free . . . Wednesday – Thai Peanut and Veggie Lettuce Rolls

I was so caught up in Earth Day stuff that I totally forgot to put up a Meat-Free Monday post! Sorry!

I love Thai food, and anything with a spicy peanut sauce is good with me!

The Vegan Chef has an amazing recipe for Thai Peanut and Veggie Lettuce Rolls that is absolutely perfect for a light dinner or elegant lunch.

I like to add fresh basil and cilantro to the mix, and top with a little Sriracha Sauce.

I dare you to eat just one!
