Meat-Free Mondays – Curry Spiced Lentils and Spinach

I love lentils.  They’re inexpensive and so versatile.

I’m excited to try this recipe for Curry Spiced Lentils and Spinach from FatFreeVegan.com.  Unfortunately, it needs to cook for 6 hours and since it’s already 2pm, I think we’ll be having a Meat-Free Tuesday instead.

In searching for a vegan recipe for dinner tonight, I came across an odd resource for vegan recipes – The Beastie Boys Message Board.  ‘Cause you can’t, you won’t, and you don’t stop eating textured vegetable protein?

  1. Sounds good, although I think I’d just cook it in a regular pot instead of the slow cooker. I love lentils, but they make me f*rt. Am I allowed to say f*rt here on your blog?

  2. Usually lentils are quick-cooking beans. I’m a huge fan on lentils cooked any way (especially with curry).

  3. Ya know, this would robaly take 45 minutes with brown rice in a regular pot on the stovetop. It sound delish! We love lentils and spinach. I’m going to meke this fer shur.

  5. I love lentils and this recipe sounds delicious I will certainly try it. I was interested to read Wendy and EY’s comments since I LOVE my slow cooker but I now have a new “waterless” cooking pan so I will try this method. It’s supposed to retain more of the nutrients and be more energy efficient – we’ll see!
